The box is an even split of rainbow trout, Arctic char, pickerel (walleye) and barramundi (Australian sea bass). It typically works out to be approximately four fillets of each, depending on the weight of each fillet. All fish is individually vacuum-sealed, deboned and frozen at peak freshness.

All Springhills rainbow trout and Arctic char are raised on our family’s farms in Grey County. Their incredible taste is thanks to our humane and sustainable raising methods. All Springhills fish are grown at small-scale farms with natural spring water, low densities and special diets.

All Springhills pickerel (sometimes called walleye) is wild caught from Lake Erie. It comes from a wild fishery that is internationally recognized as sustainable by the Marine Stewardship Council, which means it’s good for the environment and safe to eat.

All Springhills barramundi (sometimes called Australian sea bass) is raised at an indoor tropical fish farm in Mossley, Ontario called Sandplains Aquaculture. Their fish are all Ocean Wise Recommended for sustainability.

Arctic char is a rare fish originating from Canada’s North. It has a milder and sweeter flavour than its distant cousin, the trout. Pickerel is esteemed for its light succulent flavour with a fine, flaked texture.

Barramundi’s clean, buttery flavour and meaty texture appeals to just about everyone — even non-fish lovers call it a favourite! With a similar taste to halibut and grouper, it’s a sustainable substitute to some of the most overfished whitefish. It’s also packed with omega-3 fats.

We pride ourselves on offering the freshest fish available at your door. Springhills trout, char and barramundi are humanely harvested, filleted and frozen in the same day, while Springhills pickerel is immediately submersed in ice during harvest and frozen immediately after filleting. They will keep 4 to 6 months in your freezer for optimal freshness.

Springhills is a second-generation family business run by siblings Arlen and RJ Taylor. We grow rainbow trout, Arctic char and coho salmon, and also partner with independently-owned businesses to bring you an even wider variety of Ontario fish.

Note: All Springhills fish are pinboned. We inspect every fillet after deboning, but we do warn you that the odd pinbone sneaks through!
